Pasta al Limón

INGREDIENTES:

  • 250 gr. espagueti
  • Aceite de oliva
  • 4 dientes de ajo picado (usa menos si no te gusta tanto el sabor del ajo)
  • 2 rebenadas de cebolla blanca
  • 2 manojos de espinaca picada
  • 1 y 1/2 tazas de garbanzo cocido
  • Jugo de 1 limón grande
  • 1 taza de caldo de vegetales
  • Queso vegano al gusto (opcional)

PREPARACIÓN:

1. En una olla pon a hervir suficiente agua para cocinar la pasta. Cocina el espagueti por 12 minutos aproximadamente o sigue las instrucciones de tu empaque.

2. Mientras, en el sartén calienta un poco de aceite a fuego medio y cocina la cebolla y el ajo por un par de minutos. Después voy a agregar el garbanzo cocido, la espinaca picada; puedes usar cubitos de tofu o incluso lentejas cocidas en lugar del garbanzo. Exprimimos un limón grande, sal y pimienta al gusto, agregamos el caldo de vegetales. Incorporamos a fuego medio por unos minutos para que el caldito se espese un poco más.

3. Cuando el espagueti ya está listo voy a agregarlo a mis vegetales, incorporamos bien, salpimentamos y le vamos a dar un toque de frescura con un poco de ralladura de limón. Tip: agrega un poco de aceite de oliva para que la pasta no se reseque.

4. Y esta pasta al limón con un tono primaveral ya está lista para devorar. Puedes acompañarla con queso vegano rallado por encima, pero yo decidí dejarla así tal cual.
