Galletas Oreo – Veganas Libres de Gluten

Hola!! Te comparto mi versión saludable y deliciosa de las galletas Oreo, que además son libres de gluten

INGREDIENTES:

  • 1/3 taza de cocoa en polvo
  • 1/3 taza de azúcar más aproximadamente 3 cucharadas para el relleno
  • 1/3 taza de harina de arroz
  • 1 taza de agua
  • 1/2 bloque de tofu firme
  • 1 cdita. de vainilla

PREPARACIÓN:

  • Para la masa mezcla bien la cocoa, harina y 1/3 de taza de azúcar
  • Luego agrega agua poco a poco (yo lo hago por cucharadas) y mezcla bien hasta obtener una consistencia algo húmeda y firme
  • Toma un poco de masa y forma bolitas con tus manos, ponlas en una charola para hornear sobre papel encerado para hornear o sobre un tapete de silicon
  • Corta un cuadrado mediano de papel encerado y con ayuda de un vaso aplana las bolitas de masa
  • Si la masa se pega mucho al papel, humedécelo con un poco de agua
  • Hornea a 180ºC por aproximadamente 10 minutos. Revisa las galletas de vez en cuando
  • Mientras, en una licuadora mezcla bien el tofu, la vainilla y las tres cucharadas de azúcar. Te recomiendo que vayas agregando poco a poco el azúcar y vayas probando la mezcla para que quede a tu gusto
  • Ya que el tofu quedó uniforme, vacíalo en un contenedor
  • Ya que las galletas salieron del horno y se enfriaron bien, pon una cucharadita de relleno de tofu sobre una galleta y con otra galleta forma un sandwich
  • Mete tus galletas en el refrigerador un par de horas para que el tofu se asiente
  • ¡¡ Listo !!

Si te sobró tofu, lo puedes utilizar en tus smoothies para hacerlos más espesos o como yogur con fruta. Queda delicioso.
