Crumble de Manzana con Yogurt

Un bowl que sabe muy otoñal, aunque estemos a mitad del verano 🤭.

INGREDIENTES:

1/2 cucharadita aceite coco o mantequilla vegan
1/2 taza avena
1 manzana picada finamente
Canela al gusto
Jengibre en polvo al gusto
1 cucharadita miel de agave con 1 chorrito de stevia y 1 chorrito de agua
Yogurt de tofu
Crema de cacahuate al gusto

Para el Yogurt de Tofu

1 bloque de tofu silken o normal
1 tapita vainilla
1 droplet de stevia (o tu endulzante favorito)
1/4 taza leche vegetal o agua para licuar
Opcional: unas gotitas de limón para darle un poco de acidez
Procesa todo en la licuadora o procesador hasta que tenga una textura suave

PROCEDIMIENTO:

Prepara tu yogurt de tofu y guárdalo en el refri.
Calienta el sartén a fuego medio y derrite la mantequilla. Cuando está derretida agrega la avena, la manzana y las especias. Incorpora y cocina por unos 7 minutos o hasta que la avena está comenzando a tostarse.
Agrega la miel de agave con stevia y agua. Incorpora bien y cocina unos minutos más hasta que la manzana ya está suave.
Sirve en un plato el yogurt de tofu y encima el crumble de avena con manzana. Agrega crema de cacahuate al gusto y un poco más de miel de agave.
¡Desayuno ligero y delicioso listo!
