Cenas Veganas Fáciles

Para cuando se nos acaban las ideas :P



  • Corta 1 coliflor y 1 brócoli pequeños y distribuye en la charola para hornear.
  • Agrega 3 cucharadas de aceite de oliva
  • Agrega 3 dientes de ajo finamente picados..
  • 1 pizca de sal y pimienta.
  • Hornea a 200ºC por 45 aprox. removiendo cada 20 minutos.


  • Arma tu bowl con un poco de arroz cocido (puedes usar quinoa), agrega unas hojas de espinaca, frijoles negros, nuestros vegetales horneados (no olvides agregar los trocitos de ajo que están doraditos), unas rebanadas de aguacate y una cucharada de crema de nuez de la india (puedes usar hummus en lugar de crema). Y listo para devorar. Este bowl se me hizo bien práctico para esos días sin imaginación :P


  • Para el tofu: en un sartén a fuego medio calienta un poquito de aceite. Ya caliente agrega 1 bloque de tofu firme (a mi me late éste) cortado en cuadritos. Explime el jugo de 2 limones grandes y agrega una buena pizca de sal y pimienta. Deja que se doren sin voltearlos por 7 minutos de cada lado. En total me llevo como 20-30 minutos para que queden bien doraditos. Deja el tofu aparte.
  • Para la crema de cilantro: Agrega a la licuadora 1 taza de nuez de la india sin tostar y sin sal (puedes sustituir por semilla de girasol pero el sabor puede cambiar un poquito), 1 taza de agua, 1 diente de ajo, el jugo de 1 limón, 1/2 taza de hojas de cilantro frescas, sal y pimienta al gusto. Procesa muy bien hasta formar una crema. Prueba de sal.
  • Arma tus tacos: Calienta 3 tortillas, de base agrega nuestros vegetales horneados, frijoles negros, algunos cubitos de tofu doradito y encima la crema de cilantro. Yo los decoré con unas hojitas de cilantro y una pizca de pimienta negra.


  • Para la mayonesa: mezcla 1/4 taza de crema de nuez de la india (o la crema vegana que tengas a la mano), agrega 1/8 de cucharadita de mostaza, el jugo de 1/2 limón e integra muy bien los ingredientes.
  • En un bowl agrega 1 y 1/2 tazas de garbanzos cocidos y agrega la mayonesa. Integra bien. Yo le agregué unas hojuelas de peperoncini para darle sabor.
  • Calienta tu pan pita y en la base ponle unas hojas de espinaca. Agrega la ensalada de garbanzo, unos jitomatitos cherry y decora con una pizca de pimienta negra. Devóralo :P
